Q: Is there some form of RAID that allows for the addition of extra hard drives after the original creation of the RAID array?

A: Basic RAID controllers that come in the form of simple adapters in servers usually don't provide the ability to dynamically grow a RAID array. More intelligent storage subsystems have this functionality. These types of systems allow for the inclusion of new hard drives, as well as data migration from one RAID group/type to another.

However, these are expensive, enterprise-class systems that are usually part of a larger SAN. There are lower end storage systems with some dynamic functionality, but even these are pricey. So growing a simple RAID group by adding drives is unlikely unless you can find a RAID controller with exceptional functionality, which, with today's technology, is entirely possible.
